Our cabbage mashers are beautifully hand crafted in Australia by the Leura Bodger from Australian hardwood, using a traditional pole lathe. Use the cabbage masher to help break down the cell walls of the vegetables and release their juices. It is also used tamp down the vegetables, and thus pack them tight. Both releasing the juices and packing the vegetables tight aid in optimal fermentation.
Being hand crafted, no two are exactly alike. Also as they are worked from green timber, you’ll need to oil them and store them in a dry and airy, dark place so they can dry slowly over a few months. Small cracks that may open up in the wood if the wood dries too fast can be closed again by soaking in water or repeated oiling.
